Clean eating is a principle that features unprocessed, sustainably sourced and wholesome foods.  But I like to take this principle another step by creating meals that actually make you feel “clean” after eating.  Not heavier, fuller, and tired, but light, energized and refreshed.  This lemon vinaigrette does just that.  It gives a simple salad the right amount of tang and flavor that makes it delicious and satisfying yet with added nutritional benefits.  Lemon juice aids in digestion by stimulating stomach acid and bile production. It also supports liver function, which helps you to detoxify.  Plus, the vitamin C in lemons help to boost your immunity and promote healthy skin.  Clean eating doesn’t have to be complicated or fussy, in fact, it’s often the simplest of recipes that become the favorites.  

I love it with this arugula salad as I find it is the perfect offset the tangy bite of arugula and fennel.   It’s also great drizzled over avocado toast.

Ingredients
  1. juice of 1 lemon
  2. zest of 1 lemon
  3. 1 clove garlic, minced
  4. 3/4 cup olive oil
  5. Salt and Pepper
Instructions
  1. Begin by mashing garlic and 1/2 tsp salt with a fork in bottom of a mason jar
  2. Add lemon juice and zest
  3. Add in olive oil, and either whisk together or place top on mason jar and shake vigorously

This is my go-to salad dressing every summer.  A handful of fresh herbs is all you need to transform your usual salad into something more creative, fresh, and satisfying.  I make this differently every time, depending on which herbs I have on hand.  I will give you the basic recipe, but feel free to add whichever herbs you have.  You can’t screw it up, trust me!

Have you ever noticed how dark in color fresh herbs are?  That’s because of their high concentration of phytonutrients.  They are nutrient powerhouses in small form, packing more nutrition per ounce than it’s larger leafy green friends.  They also have a wide-range of disease fighting properties.  Here’s just a few things herbs can be helpful for:

Basil: The essential oils of basil have strong antioxidant and antimicrobial properties.  It has been used in traditional medicine to treat digestive complaints, arthritis, appetite stimulation, and kidney support.

Basic Vinaigrette

Everyone needs that one ‘go-to’ recipe to make a fast and delicious salad on the fly.  This is mine.  It’s a recipe that my French mother-in-law handed down to me, it is a typical French Vinaigrette.  The first time I went to France, I fell in love with having a salad at the end of each meal because of this dressing.  It cleansed the palate and ended the meal on a light, fresh note.

Lemon & Anchovy Dressing

I have a tendency to become obsessed with certain foods.  When I discovered the Irish Kerrygold butter you would have thought I won the lottery, so much joy from such a simple thing!  A year later, Kerrygold and I are still going strong.  But anchovy’s are my “it” food right now.  Not only are they packed with healthy Omega-3 fats, they add a subtle yet powerful flavor to anything you add it to.  They are wonderful in salads, I love this simply with romaine and shaved parmesan cheese.

This dressing is indispensable.  Keep in fridge for the week to drizzle on romaine for a cleaner Caeser dressing, or drizzle on sautéed greens or grilled meats.

  1. 7 anchovy filets
  2. juice of one lemon
  3. ¾ cup olive oil
  4. Black pepper
  5. Salt (optional depending on saltiness of anchovy)
  6. blend all ingredients in a blender until smooth.
