Creamy Herb Mayonnaise {for everything!}


Put this on chicken or fish, a dip for veggies or potatoes, or make this a base for your salad. You can’t go wrong with the creamy texture and flavor that the fresh herbs and garlic bring to this sauce.  As you often hear me say, throw in any fresh herbs (a kitchen staple!) that you have on hand. Tarragon gives a subtle, savory twist.  Rosemary creates earthiness. Basil, parsley, and dill for freshness and bite.  Mix and match and don’t be shy.  This sauce is the secret for turning an otherwise boring, say, chicken breast and potatoes dinner, into something much more!

  1. 1 tsp lemon juice
  2. 1 tbsp dijon mustard
  3. 2 egg yolks
  4. about 1 cup olive oil
  5. s&p
  6. 2 garlic cloves
  7. 1/4 cup chopped herbs (tarragon, dill, rosemary are a great mix)
  1. Place egg yolks, lemon juice, garlic and dijon mustard in a food processor.
  2. Pulse ingredients until well combined.
  3. With motor running, add oil in a slow, steady stream (mixture should become thick and emulsified). Slow the blender
  4. Stir in chopped herbs just until combined.
  5. Prolonged blending will "break" the sauce and create a watery consistency
  6. Season with salt and pepper.
  7. Refrigerate in an airtight container, up to 1 week.
  1. This happens: If the mayonnaise separates after the oil is added, the mixture has broken.
  2. To bring it to a creamy state, add an egg yolk and 1 teaspoon tepid water to a clean bowl, and slowly add the broken mayonnaise while whisking constantly.
  3. Then, whisk in 1/4 cup more oil.
